When using external data sources (such as CRM, SalesForce, etc.), data is often stored in the format of an object that contains fields. For example, a customer object will probably contain first name, last name, address, and other related fields.
Custom variable types are variables that contain a set of fields related to a specific object. For example, a custom variable type representing a Customer object would contain fields such as First Name, Last Name, Address, Age, etc.

Custom variable types (objects) are created and updated in the Jacada Interact Admin Console. Once custom variable types are defined, designers are able to use them in the Designer when creating Interactions.
